Founded by French-Australian winemaker Xavier Bizot and his wife Lucy DAOSA ( & Terre à Terre) produce premium still and sparkling wines from their own vineyards in two cool-climate regions: the Piccadilly Valley in the Adelaide Hills and the Crayères Vineyard in Wrattonbully, on the Limestone Coast. 

DAOSA specializes in traditional-method sparkling wines made from estate-grown Chardonnay and Pinot Noir in the Piccadilly Valley. Their flagship wine, the DAOSA Natural Réserve, is crafted with minimal intervention, showcasing the region's unique terroir
The vineyards are located in the Piccadilly Valley, primarily centered around the historic Bizot Vineyard in Summertown, one of the valley’s highest sites at 550m altitude, planted mainly with Chardonnay and some Pinot Noir. 
Since 2016, additional blocks across Summertown, Uraidla, and Piccadilly have been managed, mainly for Pinot Noir used in their Natural Réserve. All vineyards are hand-pruned, hand-harvested, and managed sustainably with minimal chemical use.
The Piccadilly Valley, a cool-climate sub-region of the Adelaide Hills established in 2000, features complex ancient geology, varying slopes and orientations, and ideal conditions for producing high-quality sparkling wine grapes!
