The wine was then left on lees with regular stirring and partial malolactic fermentation to build texture.\u003c\/p\u003e\n\u003cp\u003eThe 2025 shows white peach, fresh cream, green lemon and nougat, layered with flinty reduction and grapefruit. A small portion was fermented in seasoned French oak, followed by extended lees contact to build texture and complexity.\u003c\/p\u003e\n\u003cp\u003eHighly aromatic, it shows Meyer lemon, lime, crisp pear and Granny Smith apple, with subtle fennel and white pepper.
