An old school food and wine pairing, but it works.\u003c\/p\u003e\n\u003cp\u003eThe Spring Seed team machine pick the Cabernet when it is ripe (no green pips, thank you very much) then crush the grapes and ferment them in small open vessels. They pump the juice over the cap of skins (which rise to the top during ferment) twice daily to get colour and flavour out into the wine. Some of the wine will finish its ferment in older oak, some in stainless steel tanks. The wine will age for about 6 months prior to bottling. Pretty lemon and lime on the palate with a juicy, fresh finish. \u003c\/p\u003e\n\u003cp\u003e2025 was an early season – warm daily temperatures resulted in early bud burst (2 weeks ahead of the long-term average) and a short flowering period. Good conditions resulted in an even fruit set. The dry conditions throughout the season promoted healthy vine growth with minimal disease pressure. The warm, dry conditions resulted in an early start to vintage and small berries with remarkable concentration, making wines with excellent balance, flavour development and structure. Yields were generally down across most varieties as a result of vintage conditions. Vintage concluded by the end of March in time for everyone to enjoy Easter at home!\u003c\/p\u003e\n\u003cp\u003eThe Poppy is a light, fresh, bright style of Grigio rather than a more textural, complex Gris style (they are the same varieties btw), so more Friuli in north-eastern Italy than Alsace in France. To achieve this they pick the Grigio at night to preserve the delicate flavours and natural acidity. Grapes are fermented in stainless steel tanks, and they chill the tanks to make sure the grapes go through a very cool fermentation.
