Fermentation is gentle, with twice-daily pump overs used to draw colour, flavour and tannin from the grape skins.\u003c\/p\u003e\n\u003cp\u003eAs fermentation nears completion, the wine is gently transferred into oak barrels, using a combination of older French oak and approximately 30% new French oak, where it finishes fermenting.
