The winemaking process begins with harvesting and pressing the fruit into tanks. Utilizing 30% pressings and a higher concentration of lees during fermentation, the team allows the wild fermentation to occur naturally. After completion, the wine is carefully separated from the heavy lees and transferred to French hogsheads for a maturation period of 6 months. The resulting wine reveals clean fruit characteristics with a delicately textured mid-palate. Aromas of preserved lemon, chamomile, white nectarine, and jasmine flower waft from the glass. On the palate, a soft, creamy texture greets the taster, accompanied by a gentle yet persistent acidity. Notes of ripe lemons, ginger, mandarin, and red apples complete this harmonious wine
