At the end of Dandelion vineyards old-vine garden path there is a Fairytale come true, our 90 year old bush vine Grenache garden in Ebenezer.
After hand picking in the 2nd week of March, winemaker Elena Brooks let free run basket pressed juice ferment with natural indigenous yeasts in old French Oak barriques, then to sit on yeast lees for twenty weeks before bottling, without secondary fermentation or fining to capture the essence of our Fairytale of the Barossa.
This vintage of Dandelion's Fairytale of the Barossa Rose has a high level of natural acidity, a low pH and less than 3.0g/L of residual sugar with just 13.2% alcohol and is truly of its time and place.
