Fruit was harvested through a combination of hand picking and machine harvesting, with handpicked parcels cooled for 24 hours prior to processing. Approximately twenty percent whole bunch fruit was fermented in small open-top fermenters, while the remaining fruit was fermented as whole berries following a short cold soak. Ferments were carefully monitored and plunged daily before pressing and maturation in seasoned French oak for ten months.
