It was fully destemmed, with some whole berries retained, before undergoing natural fermentation in open-top stainless-steel fermenters. The wine was hand-plunged and pumped over daily, spending two weeks on skins before the free-run juice and pressings were combined.\u003c\/p\u003e\n\u003cp\u003eFollowing pressing, the wine was settled off gross lees for seven days, then matured for 15 months in 2,000-litre Slavonian oak foudre. It was subsequently transferred to stainless steel, where it rested on fine lees for a further six months.\u003c\/p\u003e\n\u003cp\u003eThe resulting wine is bright and savoury, with lifted red cherry and raspberry fruit supported by dried herbs, subtle spice and earthy undertones.
