In the glass this wine immediately shows its hand with a black core and a deep red rim. The lifted aromas are complex rolling with dark blue fruits, violets, hearth ash, subtle sarsaparilla, fresh herbs and tobacco, held together with hints of fine cedar. The palate is medium to full bodied with its red and blue fruits, dark chocolate, tobacco, with a juicy mid to late palate, balanced by fine tannins that are wrapped up in flesh with a subtle underlying cedary char and savoury notes.

Cellaring Drink now until 2035 with careful cellaring.

Viticulture: Sourced completely from Smidge’s own 65 yo vineyard in the southern subregion of Willunga. 2018 was warm and dry, although the cool nights were a godsend. With careful irrigation management and canopy retention the fruit ripened evenly and was machine harvested in pristine condition. This wine reflects the near perfect ripening conditions...With good soil moisture, warm days and cool nights the fruit and was machine harvested in pristine condition over two nights one week apart. The soil profile is predominantly red/brown clay/loam mottled with quartz and ironstone fragments.

Vinification & Maturation: The fruit was divided into a number of fermenters, in the pursuit of complexity, some fermented with indigenous yeasts and others inoculated with commercial strains. Fermentations were even with a maximum temperature of 280C. Average time on skins was 16 days, after which the ferments were pressed with the free run and pressings being combined. After 10 months in oak, where malolactic fermentation occurred, a small selection of barrels were selected, blended to tank and then put back to 100% new fine grained French hogsheads for a further 20 months. Racked carefully back to tank, the barrels were blended and lightly fined, then bottled without filtration. Vegan friendly and 100% Cabernet sauvignon.
