One fermented with wild yeast in older French oak, and the remainder in a ceramic egg for approx four months. Both batches rested on fine lees to add texture to the mouthfeel . The Semillon was then blended back together, clarified and then bottled while still youthful.\u003c\/p\u003e\n\u003cp\u003eFrom nose to palate, your senses will indulge in a generous burst of ripe lemon, custard apple and hints of dry straw. The palate of flavours provides a nice flow, as it glides across the buds, held firm by a fine thread of acidity and spicy phenols. The wine style is linear with driving acidity and an exceltionally long citrusy finish.
