Complex, Fresh & Alluring
Informed by the great wines of Pouilly Fume, in the Loire Valley, this is Sauvignon Blanc done differently. A lifted tropical bouquet jumps out of the glass. Heady pineapple, passionfruit and ripe peaches are underpinned by delicate characters of brioche and cashew nuts derived from lees stirring. Texture and weight are balanced by fresh varietal acid.
Wine Notes
Fermented entirely in seasoned French oak, and held on lees for four months with regular stirring, this wine is resplendent with bright tropical fruits, in perfect harmony with the complexities provided by the lees contact. Baking spice, brioche, and cashew butter are balanced with lemon lime curd acid.
Vineyard
The high altitude of the Kuitpo subregion in the Southern Adelaide Hills is ideal for this variety, allowing slower ripening and giving complexity and elegance. The shallow, well drained soils of the Morialta Park vineyard in picturesque Norton Summit allow full concentration of flavours in the fruit and a mineral acidity crucial for this style of wine.
Food Pairing
Reach for this wine as you would a Chardonnay. Try homemade pasta with a cream based sauce, fresh asparagus, and plenty of parmesan.
Cellaring
Drinking well now but has the potential to age for 5-7 years.
