2020 McLaren Vale Cabernet Sauvignon
Concept:
The concept behind the First Cut wines is based on the winemaking term "first cut." During the pressing cycle, the softer free-run juice/wine is separated from the second cut or pressings, resulting in a higher quality product.

Tasting Notes:

Aroma: The wine has lifted varietal aromas of red currant, summer berries, and cranberry, combined with bright violet perfume and subtle spice notes.
Flavor Profile: It is medium to full-bodied with vibrant flavors of red plum, blackcurrant, and cherry, balanced by oak spice and a hint of dried herbs.
Palate: The wine features lengthy tannins and a fine acid line, providing structure and length to the palate. This makes it enjoyable in its youth but also allows it to develop beautifully with time.
Vineyards:

The grapes are selected from multiple sites within the McLaren Vale region, each contributing unique characteristics to the final blend.
The Willunga area provides fruit with dark berry characters, hints of fennel, and chewy tannins.
The McLaren Flat area contributes floral notes and finer tannins to the blend.
Winemaking Process:

The grapes are de-stemmed and placed in a combination of open and static fermenters.
They are fermented on skins for 10 days with pump-overs three times daily to enhance flavor extraction.
After fermentation, the wine is pressed directly to oak barrels to complete secondary fermentation.
It is matured for 16 months in 20% new and 80% seasoned French oak, contributing to its complex flavor profile and structure.
This Cabernet Sauvignon is a well-balanced wine that showcases the unique characteristics of the McLaren Vale region. It is crafted to be enjoyed both in its youth and as it matures over time.
