XO Wine Co is a boutique winery located near Meadows in the Adelaide Hills, founded in 2017 by winemakers Greg Clack and Kate Horstmann. The winery produces small batch wines from the Adelaide Hills and McLaren Vale, with some wines made in single-barrel quantities. XO follows an academic yet artistic approach, focusing on minimal intervention to highlight the unique characteristics of the vineyards and produce wines that are both expressive and enjoyable. The name "XO" is inspired by the game of naughts and crosses, symbolizing how wine outcomes are shaped by various aligned elements such as the growing season, vineyard, winemaking, and oak choice.

Greg, the head winemaker at Chain of Ponds, and Kate, who worked at Langhorne Creek's Project Wine, started XO after converting a small shed on their 42-acre property in Kuitpo. Initially producing a few batches of their favorite varieties, XO has grown over time. As of 2022, while still balancing their day jobs, they now offer a wider range of wines, working with passionate growers dedicated to quality wine production.
