For OG Tonic fans. There’s firm tannins, there’s savouriness, there’s a generous whack of charm – Mataro is back. Mataro is where it all began. Red to purple fruits, a gamey, savoury edge, firm structural tannin but can embrace a feeling of real charm. The winemaking is the same as the Tonic Grenache: hand-picked, some whole bunch employed in fermentation for perfume and that savoury something. Post ferment, the benign neglect kicks in, topped regularly in old barriques and puncheons but otherwise untouched. Racked and sulphured just before bottling.
