Crafting a pinpoint precise, squeaky-clean wine is one of the most uninspiring pursuits imaginable. Instead, Unico Zél embraces creativity and the pursuit of radical experiences. Since its inception, Esoterico has become one of the brand’s most cult-followed wines. It defies easy classification — neither white nor red — often described as an amber wine, though the team simply calls it Esoterico.

No additions are made during the winemaking process, apart from a small amount of sulphur at bottling. The wine undergoes no fining or filtration, instead clarifying naturally by gravity, resulting in a gentle haze and light sediment.

This is among the most enjoyable wines for the Unico Zél team to craft, as there is no preconceived idea of what it should taste like. The guiding principle is pure drinkability — a “scrumptious” quality defined by mouthwatering acidity and lively, attention-grabbing tannins. At its core, Esoterico remains a true Bohemian spirit.
