teamed with food friendly fresh acidity.

WINEMAKING:15% whole bunches, the remainder de-stemmed and sorted. Long, cool, gentle fermentation by indigenous yeast.

MATURATION: Basket pressed and carefully matured on fine lees in a combination of large French oak casks and concrete tanks.

BOTTLED: 12 months post-harvest
