The 2025 Pike & Joyce ‘Sépáre’ Grüner Veltliner presents a pale straw colour with green hues. Aromatically, it is lifted and expressive, with citrus and apple blossom leading into layers of pear skin and the variety’s hallmark white pepper spice.

The palate opens bright and fresh, showing lime zest and crisp green apple, followed by a subtle sugar snap pea sweetness and a distinctive peppery edge. A gently rounded mouthfeel introduces hints of white stone fruit, adding texture before a soft yet persistent line of acidity brings balance and length.

This, the 13th release of the Austrian variety for Pike & Joyce, highlights the suitability of the Adelaide Hills as its home. Sourced from two distinctly separate vineyard parcels, the name ‘Sépáre’ reflects their distance. Drinking beautifully now, it will continue to build complexity and texture over the next five to eight years, and pairs particularly well with aromatic Vietnamese dishes with a touch of fish sauce.
