Malt Donkey’s Pine Hill Serrello is a cult classic—approachable yet deeply expressive, shaped by both site and season.

On the nose, it opens with layered aromatics of sesame crackers, dried fruits, and fresh honey, underscored by subtle herbal lift. These notes carry through to a smooth, rounded palate, where flavours of rye bread and lemon blossom are wrapped in a creamy texture. A distinctive mineral thread—drawn from Pine Hill’s black clay soils—adds structure and quiet complexity.

The vintage conditions, marked by generous early rainfall and late-season stress, have refined the grain selection, resulting in concentrated flavour and a balanced protein-starch profile that translates clearly in the glass.

The finish is clean and persistent, with lingering impressions of sesame, celery, young basil, and a gentle echo of dried fruit, spice, and honey.
