Ashton Hills Piccadilly Valley Sparkling Vintage Rose 2020
Pinot Noir fruit for the Ashton Hills Vintage Rosé is sourced from a single vineyard lying in the Piccadilly Valley – a particularly cool, wet and humid part of the Adelaide Hills. An area well-suited to producing crisp, finely-flavoured sparkling wines.
Bouquet
Fresh florals and notes of strawberry and cherry with a hint of orange zest.
Palate
The complex palate is layered with red fruits and creamy notes from the extended time on tirage. The fresh and crisp acid line provides the structure, drive and balance to the low dosage.
Growing Conditions
Flowering in Piccadilly Valley is always relatively late owing to the cool climate. Combined with a dry season, yields were compromised, as they were across the state. Although in short supply, fruit quality was excellent and ripened in mild conditions showing good flavour and concentration
Hand-picked fruit was chilled before gentle, whole bunch pressing. Fermented in a mix of tank and old, larger format oak, the pinot noir base wine was then assembled and tiraged, refermenting in bottle via methode traditionnelle and disgorged after two years. The attractive salmon hue was achieved by holding the juice in contact with the grape skins for a short amount of time before pressing, enhancing the depth of flavour and texture.
