The grapes for Atlas Adelaide Hills Chardonnay 2021 were sourced from the Hill Smith Vineyard at Woodside in the Adelaide Hills. The east-facing vines of this vineyard are nourished by alluvial loam, limestone, shale, and quartz soils, situated at an altitude of around 400m. The climatic conditions in 2021 set the stage for one of the most outstanding Adelaide Hills vintages in recent memory.

In terms of winemaking, Atlas took a distinct approach, choosing to honor the unique qualities of the fruit from this exceptional vineyard rather than conforming to a predetermined style. Grapes were carefully hand-picked and underwent whole-bunch pressing. The resulting juice made its way directly from the press to French oak puncheons for wild fermentation on full solids. Following fermentation, the barrels were meticulously topped (with no malolactic fermentation) and lees stirring continued for 8 months. This meticulous process aimed to develop texture, interest, and complexity, culminating in the blending and bottling of a wine that captures the essence of the extraordinary Hill Smith Vineyard.
