Schwarz Grower's Rose 2022 - 6 Pack
The 2022 Rosé is a blend of Grenache and Mataro from four of our Barossa Valley growers. All fruit was hand-picked, in the first week of March 2022, with much of the fruit destemmed and crushed, leaving a small portion in its whole bunch form.
All juice was settled for 24 hours and then racked into fermentation tanks where the wild yeast was allowed to kick off and ferment through to dry. Temperature was set at a constant 16°, once fermenting two Puncheons were filled from the Mataro portion and
fermented to dry to add extra complexities to the finished wine. 25% of the Rosé was inoculated with Malo lactic bacteria to give extra roundness and fullness to the finished wine.
Blending, filtering, and stabilising completed mid-July, and the end product bottled early August.
