This Fiano comes from the biodynamically certified Hiltop Vineyard, just 2 km from Port Willunga beach in McLaren Vale. The vines grow beside 200-year-old River Red Gums, whose decomposed leaves impart eucalyptol to the grapes, giving the wine a distinctive local character. The fruit is handpicked at night to preserve freshness, then fermented on skins for 90 days in 700L French oak demi-muids and aged for a further 10 months on lees.
No acid, yeast, enzymes, or fining agents are added.

Pale copper in colour, this wine opens with aromas of strawberry, fennel, and brioche. The palate is rich and textural, showing flavours of nougat and brioche with a smooth, honeyed beeswax viscosity. It pairs beautifully with smoked salmon, or a blood orange and fennel salad, and will drink well now through to 2028.
