The 2024 Simon Says Saperavi is crafted from fruit grown at Chalk Hill Viticulture’s California Road Vineyard in McLaren Vale. The vineyard’s proximity to Port Willunga beach provides cooling sea breezes that preserve acidity and flavour, while mature vines deliver exceptional concentration. Saperavi, Georgia’s most famous red grape, is a rare teinturier variety, with pigment in both the skins and pulp, producing deeply coloured, full-bodied wines. The fruit was machine-harvested at night, open-fermented with indigenous yeasts, and hand-plunged twice daily for seven days. Fermentation finished in old French oak over six months, with no added acid, enzymes, tannin, or fining agents.

Dark purple in colour, the 2024 Simon Says Saperavi bursts with aromas of blueberry, dark cherry, and violets. The palate is rich and full-bodied, showing layers of ripe cherry, dark chocolate, and spice, framed by firm tannins and balanced acidity. It pairs beautifully with slow-cooked braised beef cheeks or roast beetroot risotto and will age gracefully for over a decade.
