PALATE: Delicate and soft on the palate, there's a gentle structure that frames the juicy fruit laden pallet. A hint of savoury dried herbs and spice compliment the plump berry flavours and a moreish acidity.
Harvested in the morning 90% destemmed, 10% whole bunches Fermented with wild yeast for 1 week on skins Pumped over twice daily Gently pressed to stainless steel for 6 months Full and spontaneous MLF.
