Thistledown Suilven Chardonnay 2021 - 6 Pack
Undoubtedly capable of producing world-class Chardonnay, the Adelaide Hills, with its verdant rolling hills, precipitous slopes, and a multitude of micro-climates, creates an environment that enhances complexity, intensity, and elegance. Among the sub-regions of the Hills, Piccadilly, as one of the highest and coolest areas, has become synonymous with the very best fruit. In alignment with the mountain named Suilven on the label, this represents the summit of their white winemaking.
Vintage Conditions
Rare is the vintage that combines good yields and high quality, but 2021 was just that. It proved to be a remarkable vintage, once again affected by the pandemic, but characterized by measured and mild conditions, free from the heat spikes or drought of recent years. Adequate winter rains filled soil profiles, and the mild weather, with intermittent rains throughout the growing and ripening season, ensured that fruit ripened gradually over an extended period. The vintage stood out as one of the longest in recent history, yielding spectacular results—healthy fruit, moderate sugars, and complex flavors. The wines produced showcase beautiful balance, fragrance, and varietal typicity.
Winemaking
With such perfect raw materials, their only job was not to undo nature's good work. Fruit was hand-picked in the cool morning of March 21st. Transferred straight to the press, a very slight settling of juice occurred, retaining a high solids content. A combination of new French oak hogsheads and concrete eggs was filled, and they waited for natural fermentation to commence—happening at quite a rate! The finished wine was held in barrel and egg, with regular battonage, for 10 months before bottling with only a very light fining and filtration.
Tasting
Refreshing white fruits, accompanied by a hint of spice and light oak on the nose. Zippy acidity, white and stone fruits such as peach, with some minerality adding texture.
