Vinification: Hand-picked in the cool of the morning, wild fermented in a stainless-steel tank with 20% whole bunches. Basket pressed into a seasoned French oak puncheon and matured for 6 months

Vegan, no fining or filtration. Minimum sulphites used.

Enjoy now or cellar 10+ years. Pairs well with Paella, grilled meats and cheese. Can be served lightly chilled in the summer
