The Dandelion Twilight Of The Adelaide Hills Chardonnay 2023 sourced whole bunches from their finest Chardonnay Vineyard nestled in the heart of the Adelaide Hills. Hand-picked in late March during the twilight hours, these grapes represented the essence of their Chardonnay's acid sunrise, benefiting from the cool of early evening. The fruit was carefully destemmed in small batches, preserving its integrity before filling their press precisely.

The free run juice underwent fermentation in small stainless steel tanks maintained between 11 and 14 degrees Celsius. Subsequently, fermentation concluded in a selection of new and first use French Oak Barriques. The resulting wine showcases a pronounced natural acidity, maintaining a bone-dry profile with an alcohol content of just 12.5%.

After maturing for 9 months, the Twilight of the Adelaide Hills Chardonnay was bottled with minimal intervention, aiming to capture the pure essence of the vineyard.
