‘The Stocks’ Shiraz, Woodstock’s flagship wine, comes from 31 rows of low-yielding vines planted around 1900 on a sandy north slope of the estate. Low yields and careful vineyard management, including hand-thinning and dry-growing, ensure even ripening and rich, focused fruit. Grapes are harvested at night, cold-soaked, and fermented in small open fermenters before aging in selected French and American oak barrels.

Deep red with purple hues, the wine offers plush aromas of red and black fruits, dried spice, and toasty oak. The full-bodied palate features ripe tannins, harmonious mid-palate fruit, and a structured, elegant finish. Designed for cellaring, it develops beautifully over 10–15 years, and pairs wonderfully with rich dishes like slow-cooked beef ribs, seared venison, or fine cheeses.
