With a pH of 3.83 and total acidity of 4.7, this vintage presents a glorious, crunchy texture from whole bunches of organic Shiraz sourced from Onkaparinga Hills, planted on schist and clay in 1996. As the first fruit of the vintage, it was pressed straight to seasoned French oak for 5 months, fermented with indigenous yeast and no additional inputs. The result is a Syrah that is both vibrant and complex, showcasing a refined balance and an exceptional character.
