J & S Fielke Piccadilly Valley Pinot Noir 2023
Sourced from a single south facing site in Summertown, planted to D5V12. The very cool 2023 vintage allowed us to pick this site later than any previous year, on the 22nd of April, enabling full flavour development, without the need of additions. The wine was fermented with 20% whole bunch, and after a 5 day cold soak, a wild fermentation began. After 22 days on skins, the wine was pressed and after settling overnight it was barrelled down to 25% new oak for 9 months aging, before racking to bottle without fining or filtering.
