This special wine has all the varietal characters expected of a high quality Adelaide Hills Pinot Noir; stone fruit, apple and pear, white florals and subtle herbal character. The skin contact fermentation adds a beautiful componenet of subtle strawberry and red cherry, with a hint of tannin on the finish. Light phenolics make this a perfect food wine, with a textural element adding a serious gastronomic flair.

Handpicked bunches were crushed and destemmed into an open 2-tonne fermenter and allowed to ferment naturally. Gently hand plunged twice a day for gentle extraction of colour and phenolics. Bottled unfined and unfiltered.
