Sourced from select vineyards in Ashton, Woodside, and Lobethal, with predominantly south-east and east-facing aspects, the fruit benefits from slow, even ripening despite a notably warm and dry growing season.

Careful handling in the winery begins with hand-harvesting, followed by overnight chilling and whole-bunch pressing to capture pristine free-run juice. A deliberate oxidative approach during fermentation, combined with the inclusion of lees, builds subtle savoury complexity while maintaining freshness and purity.

Aromatically, it shows lifted notes of Nashi pear and apple, which carry seamlessly onto the palate. Dry, crisp, and refreshing, the wine is driven by bright acidity and lively intensity, with a fine balance between fruit purity and a gentle savoury edge.
